Gnomio is on his way

Well firstly sorry for the delay in posting. It’s been a bit busy and brewing has taken a bit of a back seat.

But I am now back in the saddle again and away we go

Today was the day that gnomio got his chance.

After getting rid of the chard fence etc we had a bit of a late start and he was not very forth coming. Gnomio decided to stick after about five minutes so he got a damn good stiring and that sorted him out after that he behaved and we eventually got to an og of 1044 which is about spot on for what I was looking for.

Gnomon will hopefully be a light summer ale full of spelt cascade and simcoe hopes. He is very loosely based on a lager grain bill of Maris otter and pilsner malts with a it of Vienna malt thrown in.

Mangrove jack hop head yeast will be being taking care of the alcahol production. That got a bit of a hand with some nutrient.

It is also a first time outing for the new fermentation fridge so hopefully that will help things on the way.

I have also been getting to grips with the CO2 side of things whilst I’ve not been brewing. This is more tricky than first thought. Little nuances keep tricking me up. The last batch was marvellous but flat cus I forgot to cold crash and up the pressure during the crash. But we live and learn.

So I have the grain in for a Helles style lager which will be next in the kettle. And a fat old bunch of kviek yeast to get it bashed out in a week or so. None of this 12 week lagering nonsense.

Well it will is about time mr mangrove jack and gnomon made their acquaintance.
